vinIn collaboration with INRA Colmar, we are interested in « secondary metabolism of the wine grapes », in particular on the biosynthesis of the aromas of the grapes and their defense metabolism.

The aromas of the wines are due to a complex mixture of volatile molecules, some of which are present in the grapes and others are formed during fermentation and aging.

Our goal is to synthesize significant biosynthetic metabolites to understand their influence on wine aroma, but also to study their possible involvement in the defenses of the wine grapes against pathogens.
